I spent the first day of spring whipping up a little dessert that I feel encompasses the season. I don't know if it's the flavor or the color, but something about lemons just signifies spring to me. I took the recipe out of what I refer to as, My Big Southern Living Cookbook (it's no secret how much I love Southern Living here, here, and here), but there is a similar recipe here.
Lots of sugar, lots of eggs, and lots of lemon makes for a classic and delicious dessert- perfect for the holiday weekend!
